A very interesting read.  What do you do when Fidel Castro takes power and the revolution leads to scarcity of certain foods? Nitza Villapol was the host of  Cocina al Minuto, a popular cooking show in Cuba, and through the decades, till the 1990s, she adapted her cooking to what was available, thus reflecting the changing political and economical realities, agricultural reforms and trade embargoes in her country.

For over 40 years, Villapol hosted a popular cooking show in Cuba, hnitzainkitchen_custom-34dc3c562a5bea330ebef88fcd4e7efb5e0ce3f7-s800-c85er recipes shifting to reflect the realities of life under the revolution. No meat? No problem — she fried plantain peels instead.
